Their philosophy? Make the best from the best. They imported 335 Tuscan varietal trees (Frantoio, Moraiolo, Pendolino and Maurino) from Italy in 1997, and planted them from bare root. And they’ve transplanted 100-year-old California Mission trees that have blessed us with small, but gold medal winning harvests.
The harsh climate in the Sierra Foothills is also best for coaxing forth the character and complexity you expect from a premium, hand-crafted olive oil. The same is true for the decomposed granite soil. And they do their part, as well! Their approach? Quite simple, really: just apply the highest standards every step of the way, from tree care, to organic fertilizers, to monitored watering, to hand-harvesting at peak ripeness. (They are also 100% solar-powered, which means a light and loving footprint on Mother Nature.)
Finally, to give you the maximum quality and freshness, they press their olives in a vacuum mill within 2 to 4 hours of picking. This maximizes the extraction of polyphenols (antioxidants) – which for some people is almost as important as great taste. Their cold-pressed, 100% first-crush milling ensures that you experience luscious flavor and maximum health benefits.
